"DON RAMÓN DE SALDAÑA, ELDEST SON OF COMMANDANT ALVARO and Benita, was sixty-six years of age and sprightly in mind and limb. Often he reflected upon the three great joys in his life and the two inconsolable tragedies.

It is a MYSTERY still how this culture managed the way to melt the gold to obtain the exact grade of gold and copper to maintain a high purity, it is still unknown how such quality was achieved since they would need kilns that would reach a thousand degrees Celsius to melt these pieces
One of the most famous activities of the Quimbaya are the luxurious goldsmith works, which exhibits an incredible beauty as well as a perfect technique. They developed metallurgy systems to combine copper with gold that was not abundant in their region (unlike other areas of the country). This combination of gold and copper, called "tumbaga", would not detract from the attractiveness, brightness and durability of its magnificent pieces, of a spectacular vivacity. One of them, very popular, is the famous poporos. His goldsmithing is one of the most important in America given the exquisite beauty of the pieces expressed by very well developed metallurgical methods.

Another of the mysteries of the Quimbaya Culture are the Quimbaya artifacts, formerly called "Pájaros del Otún", since the former was found near the banks of the Otún River in the province of Risaralda.

The Quimbaya inhabited the areas corresponding to the modern departments of Quindío, Caldas and Risaralda in Colombia, around the valley of the Cauca River. There is no clear data about when they were initially established; the current best guess is around the 1st century BCE.

The Quimbaya people reached their zenith during the 4th to 7th century CE period known as The Quimbaya Classic. The culture's the most emblematic piece comes from this period, a form of poporo known as the Poporo Quimbaya, on exhibit at the Bogotá Gold Museum. The most frequent designs in the art pieces are anthropomorphic, depicting men and women sitting with closed eyes and placid expression, as well as many fruits and forms of poporos.

Most of the retrieved items are part of funeral offerings, found inside sarcophagi made of hollow trunks. The gold represented a sacred metal and the passport for the afterlife. Historia del ceviche.


El ceviche o cebiche, no tiene un origen claro, sin embargo el más

probable se atribuye a los pueblos aborígenes de las costas pacificas de Sudamérica, en especial de Perú. Se dice que los primeros ceviches incluían carne de pescado mesclada con chicha, sal y ají. A la entrada de los españoles se añadieron ingredientes clásicos de lo gastronomía mediterránea, como la cebolla y la naranja agria.
Es muy destacada la frase de famoso chef español Ferrán Adrià, el cual cito que el cebiche nació en el Perú, por lo que el auténtico y genuino es el peruano.
Según se dice el nombre ceviche, proviene de la palabra Quechua “siwichi”, aunque otras fuentes sugieren que se deriva de la palabra Árabe “sibech” .
Se dice que muchas mujeres aborígenes de Perú, que eran esclavas de los españoles, mezclaban jugo de naranja agria con pescado crudo, a esto se le conoce como dejar escabechar el pescado o dejar que se cocine dentro del jugo de naranja agria.
El ceviche, es un platillo típico de casi toda Latinoamérica, desde México hasta Argentina, claro que cada país varía un poco la receta aunque conserva el concepto (Mezclar algún tipo de carne de pescado o marisco con jugos cítricos), aunque ha evolucionado de tal manera que se le agrega cebolla, culantro, algunas salsas y en muchas ocasiones se sustituye el cítrico por vinagre.
Aunque no se tiene muy claro, el cómo se propagó por el resto de Latinoamérica, la teoría más fuerte es que se hiso un plato muy gustado por los colonos españoles, preparándolo allá donde iban. Por tal motivo esta receta se extendió por todas las colonias Latinoamericanas, a lo cual Costa Rica no fue la excepción.
Este proceso de expansión del ceviche por nuestros países, se llevó a cabo durante la colonización española, aunque no se tienen datos de una fecha exacta de llegada a nuestro país.
Otro factor muy importante en la difusión de la receta del ceviche, ha sido la inmigración de peruanos al resto de países latinoamericanos, entre ellos Costa Rica, los cuales nos han legado parte de sus costumbres y recetas de alimentos.

El ceviche en Costa Rica.

En Costa Rica, se sabe de preparaciones que hacían nuestros aborígenes de las regiones costeras, en base a fermentos de guineo (vinagres) o marinados con mezclas de jugo de limón y agua salada con pescados que luego comían, sin embargo la fecha exacta de llegada del ceviche al país no está datada en ningún libro de historia hasta donde conocemos.
Hay historias que relatan que con el ingreso de los barcos pesqueros y otras culturas en las regiones de la costa pacífica, se introdujo el hábito de comer diferentes tipos de mariscos frescos, marinados únicamente con jugo de limón , pescados, camarón, ostras, langosta, sal marina, etc. Que luego nuestros pescadores adoptaron y lo convirtieron en lo que es nuestro tradicional ceviche, que es cocinado totalmente en el jugo del limón con muchos olores.
Otras historias relatan que fueron los chinos los que llegaron a las regiones costeras de nuestro país y estando habituados al pescado crudo y no contar con su salsa adecuaron la forma de comerlo marinándolo con limón sal y soja.
La última dice que los pobladores que llegarán a limón y de cultura afrocaribeña ya traían como algo tradicional de su gastronomía, el consumo de este tipo de marinados, la más veraz parece ser la primera de las historias y que fueron los pescadores extranjeros los que introdujeron el ceviche a Costa Rica y entonces se origina un hábito de consumo del ceviche que se extiende por todo el territorio nacional.
Al ser Costa Rica un país rico en regiones marítimas y de una gran riqueza pesquera también, se convierte en el país después del Perú donde más variedades de ceviches se consumen, así pues encontramos de cambute, de casco de burro (variedad de caracol de carne apreciada), de cucaracha(variedad de molusco), de piangua, de chucheca, de mejillón, de ostión, de ostión vaca, de ostras, de camarón, de loro, de pargo, de corvina, de marlín, de lenguado, de bolillo, de langosta, de langostino, de camarón de río, de mero, de robalo, de tilapia, de dorado, de sábalo, de trucha y así una innumerable variedad de pescados que existen en nuestras regiones marítimas. Incluso se consumen ceviches de pollo, de palmito, de plátano, de banano, de pejibaye, de chayote y también existen los cocteles que a diferencia del ceviche que es cocido en el jugo de limón, los cocteles son primero blanqueados en agua caliente o cocinados como es el caso del pulpo, el calamar, el atún y otras variedades de pescados y mariscos.
En cuanto al estilo del ceviche Peruano que es también muy conocido y gustado en nuestro país, cabe destacar que fue Costa Rica uno de los primeros países del mundo donde se dieron los primeros pasos del auge gastronómico de Perú y fue uno de los primeros países en tener restaurantes de comida auténtica peruana para servicios a la carta, entre los pioneros de esta revolución gastronómica de Perú a nivel internacional, destaca el Ceviche Del Rey uno de los primeros restaurantes de comida peruana en Costa Rica y que aún hoy en día existe, así se destaca en algunos artículos de la prensa peruana que reconocen en Costa Rica a uno de los primeros países a los que exportaron su gastronomía.
